This recipe makes three servings.

Recipe Ingredients:

  • 100g Macaroni or (other pasta)

  • 100g of dried lentils

  • 1 can of Cream of Mushroom

  • 100g of broccoli

  • 30-60g of Cheese

  • 1/2 tbsp Garlic Powder

  • 1/2 tbsp Paprika

  • Pinch of Salt & Pepper

Recipe Prep

  1. Wash and rinse the dried lentils in a strainer until the water runs clear. Place in a bowl and soak for at least 1 hour

  2. Chop broccoli into bite-sized pieces

  3. If you purchased your cheese in a brick, chop them into cubes. If you purchased shredded cheese, you can skip this step.

Protein Mac & Cheese:

  1. Prepare your macaroni (or other pasta) according to the directions presented on the box or bag. Cook until al dente. Strain when cooked and set aside for later.

  2. In a large pot pre-heated over medium heat, add the can of cream of mushroom soup. Fill the empty can with water and slowly add it to the pot, mixing thoroughly to create a smooth sauce.

  3. Add 1/4 tbsp of garlic powder and 1/4 tbsp of paprika to season.

  4. Strain the dried lentils that have been soaking and then add them to the sauce. Also, add a steamer basket at the top of your pan with the broccoli. Reduce the heat to simmer and cook (stirring occasionally) until the lentils are cooked through. This should take roughly 20 minutes, however, the longer they soak the less time it will take for them to rehydrate and cook through.

  5. Remove the steamer basket with the broccoli and set aside for later.

  6. Once the lentils are cooked through, add the mushroom soup and lentil mixture into a blender and pulse until the lentils are completely pureed into the sauce.

  7. Add the mixture back into the pot and add the cheese. Mix thoroughly until it’s completed melted and combined.

  8. Finally, add the broccoli and pasta. Mix everything together until the pasta is completely coated. Season with the remaining 1/4 tbsp of garlic powder, 1/4 tbsp of paprika, and salt and pepper to taste.

  9. Separate into three even containers and you have 3 meal prep lunches ready to go for the week!!
