Spicy Peanut Noodles Bowl

Peanut Noodle Bowl Ingredients:

  • 40g Sweet Potato Noodles

  • 1 cup of Red Kidney Beans

  • 20g Yellow Onion, chopped

  • 3 cloves of Garlic

  • 30g of a Yellow Bell Pepper, chopped

  • 1 Zucchini, chopped

  • 10 Enoki Mushrooms, chopped

  • 1 cup Broccolini, chopped

  • Green Onion (garlish)

  • Lime Wedge (garnish)

  • 1 tbsp extra virgin olive oil

  • Spicy Peanut Sauce

Preparing the Sweet Potato Noodles:

  1. Fill a deep pot with water and heat over the stove until it reaches a rumbling boil. Add your sweet potato noodles (this is the brand I use) and cook for 5-6 minutes. Once it’s fully cooked, drain in a colander and rinse with cold water. Set it aside for later.

Vegetable Stir Fry Recipe:

  1. In a wok (or large pan), heat the olive oil over medium heat.

  2. Once warm, add the yellow onions and cook them until they become translucent and fragrant.

  3. Then, add the minced garlic. Cook for 1-2 minutes, or until fragrant.

  4. Add the yellow bell peppers and broccolini. Cook until both are tender.

  5. Next, add the zucchini and enoki mushrooms. Cook for 2-3 minutes, avoiding the zucchini from becoming overcooked and mushy.

  6. Season with salt, pepper, and garlic pepper, to taste, and remove the stir-fried vegetables from the heat.

Preparing The Red Kidney Beans:

  1. After opening the can, pour the beans into a colander and rinse with cold water. Set aside for assembly.

Spicy Peanut Noodle Bowl Assembly:

  1. On a plate, spread 1/2 of the vermicelli sweet potato noodles to cover the bottom of the plate.

  2. Then, on one side of the noodles, top with 1/2 of the stir-fried veggies mixture.

  3. On the other side of the noodles, add 1/2 of the red kidney beans.

  4. Next, top everything off with the spicy peanut sauce (as much or as little as you prefer).

  5. Finally, garnish with green onions and a lime wedge.

  6. Before eating, squeeze the lime wedge over your meal and mix everything together! Enjoy!
