Boneless BBQ UnChicken Wings

This recipe makes 12 unChicken Strips.

Ingredients:

  • 6-8 large oyster mushrooms

  • 1/2 cup of flour

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp of cayenne pepper

  • 200 ml of water

  • 1 cup of panko bread crumbs

  • Frying oil of choice

  • 1/2 cup BBQ Sauce

Other Optional Ingredients:

  • Vegan Ranch Dressing

  • 1 large Carrot

  • 1 large celery stock

Preparing the oyster mushrooms:

  1. Clean the oyster mushrooms with water and pat dry.

  2. Using a knife, cut large oyster mushrooms in half (following the grain of their gills) to make two UnChicken strip shapes.

  3. Set aside on a dry paper towel until you’re ready to batter.

Preparing the batter:

  1. In a bowl, mix together the flour, black pepper, garlic powder, onion powder, and cayenne pepper.

  2. Slowly mix in the water in small increments and wait until the water is fully combined before adding more water. This helps prevent clumping.

  3. Continue adding water until the flour mixture resembles a loose fry batter. You may or may not need all 200 ml of water.

UnChicken Wings Directions:

  1. In a frying pan, pour enough frying oil to coat at least 1/2 an inch from the bottom of the pan. Heat the oil over medium heat.

  2. While you wait for the oil to heat up, set up your assembly line: raw oyster mushrooms on one plate, your batter in another bowl, and a bowl with your panko bread crumbs.

  3. Once the oil is hot, fully coat your raw oyster mushrooms in the batter.

  4. Then, immediately over the batter on your oyster mushroom with the panko bread crumbs.

  5. Finally, carefully place the coated oyster mushroom in the hot oil. Adjust the temperature of your stove as necessary. It should sizzle, however it shouldn’t be a chaotic mess of oil pops.

  6. Flip once the bottom half is brown and crispy.

  7. Once both sides are brown and crispy, place on a wire rack covered in a paper towel. This will help soak up excess oil.

  8. Continue steps 3 to 7 until all of your UnChicken Strips are cooked.

  9. Once all of your UnChicken Strips are cooked and have had a few moments to cool on the wire rack, coat them in your BBQ sauce of choice.

Serving Instructions:

  1. Plate all of your BBQ UnChicken Strips on a plate

  2. Peel the carrot and cut it into carrot strips. Add to the plate.

  3. Cut the celery stock into celery sticks. Add to the plate.

  4. Serve them all with a side of vegan ranch dressing.

  5. Enjoy!
