Leftover Turkey And Rice Soup

Recipe Ingredients:

  • 1 tbsp salted butter

  • 1 clove crushed garlic, raw

  • 1 oz grated ginger root, raw

  • 10 oz boneless, leftover roasted turkey

  • 3 cups organic, low-sodium chicken stock

  • 1 stalk celery, chopped

  • 1 cup kale, raw and chopped

  • 1 small potato (1-3/4” to 2-1/2” diameter) with skin, raw and chopped

  • 1 medium (2-1/2” diameter) onion, raw and chopped

  • 1 medium carrot, raw and chopped

  • 1 oz white rice, dry and uncooked

Directions:

  1. Melt butter in a large pot over medium heat, add chopped onion, chopped carrot, chopped celery, crushed garlic, and grated ginger, sautéing for 5 minutes

  2. Add chopped kale, rice, and hot chicken stock.

  3. Cover and simmer for 15-20 minutes or until the rice is fully cooked.

  4. Add shreds of the leftover roasted turkey. Cook for an additional 5-10 minutes.

  5. Season with salt and pepper.

Optional: Garnish with your favourite herbs and serve with a slice of whole grain toast.
