This recipe makes 5-6 sandwiches.

Ingredients:

  • 500 g of chickpeas (or roughly 2 cans)

  • 50 g of firm tofu

  • 1/2 cup of vegan mayo

  • 3 tbsp of mustard

  • 1/4 cup of thinly chopped red onions

  • 1 stock of thinly chopped celery

  • 1/2 tbsp of garlic powder

  • 1/2 tbsp of black pepper

  • 1/2 tbsp of paprika

Vegan Egg Salad Recipe

  1. Drain and rinse 2 cans of chickpeas. Then, put it in a large bowl.

  2. Cut your raw firm tofu into 1/2 cm x 1/2 cm cubes and add them to the large bowl with your chickpeas.

  3. After thinly chopping your red onions and celery, also add them to the large bowl.

  4. Add the vegan mayo, mustard, garlic powder, black pepper, and paprika to the large bowl as well.

  5. Mix all of the ingredients thoroughly and add salt to taste.

From here, the vegan egg salad is ready to enjoy.
