This recipe makes 2 servings.

Ingredients:

  • 2 cups of raw shiitake mushrooms

  • 1/4 cup of dried white rice

  • 1/4 cup chopped onions

  • 1 tbsp of vegetable oil

  • 2 tbsp soy sauce

  • 2 cups of water

  • Noble Jerky Teriyaki Vegan Jerky

  • Green Onions

  • Garlic Powder

  • Black Pepper

  • Salt

Mushroom Rice Porridge | Recipe Prep:

  1. Clean the shiitake mushrooms with water and pat dry. Cut them into bite-sized pieces

  2. Chop 1/4 cup of raw onion

  3. Measure out 1/4 cup of white rice. Rinse rice with cold water to release some of the starch

Mushroom Rice Porridge | Recipe:

  1. In a pan, heat vegetable oil over medium heat.

  2. Add raw onions and cook them until they are fragrant and translucent.

  3. Once the onions are cooked, add the shiitake mushrooms and a pinch of salt. Cook the shiitake mushrooms and onions until the mushrooms have released most of their moisture. Stir regularly to prevent them from sticking to the pan. Once the mushrooms have released most of their moisture, remove them from the heat and set them aside for later.

  4. In a pot, add your clean rice and 1 cup of water. Add garlic powder, black pepper, and salt to taste. Once it begins to boil, add your sauteed mushrooms and onions.

  5. Continue to stir everything through a light boil until the rice begins to cook through, double in size, and the porridge begins to thicken. Add more water (in 1/4 cup increments) if the porridge begins to thicken before the rice is fully cooked through.

  6. Once the porridge has thickened and the rice is soft, add the soy sauce and thoroughly combine.

  7. Add to a bowl and garnish with some green onions and 1/2 a pack of Noble Jerky’s Teriyaki Vegan Jerky for each bowl. Enjoy!
