Vegan Tuna Sandwich (Chickpea Salad)

Ingredients:
100 g chickpeas
1/2 medium avocado
1/4 tbsp vegan mayo
1 shallot, chopped
1/2 tbsp chives, chopped
1/8 tbsp garlic powder
1/8 tbsp black pepper
1/2 tbsp fresh lemon juice.
Chickpea Salad Recipe:
After weighing out 100 g of chickpeas, remove the skin.
In a bowl, mash the chickpeas and avocado to the preferred texture (mash more if you’d like a smoother texture; mash less if you’d like a chunkier texture).
Add the vegan mayo, shallot, chives, lemon juice, garlic powder, and black pepper. Mix until all of the ingredients are well combined.
Sandwich Assembly:
Toast your bread of choice until crispy and rub a raw clove of garlic on your warm toasted bread. Or, if you’d like a lettuce wrap, omit steps 1 and 4.
Add a layer of crisp lettuce.
Top lettuce with chickpea salad mixture.
Add the top slice of bread and enjoy.
