Vegan Tuna Sandwich (Chickpea Salad)

Ingredients:

  • 100 g chickpeas

  • 1/2 medium avocado

  • 1/4 tbsp vegan mayo

  • 1 shallot, chopped

  • 1/2 tbsp chives, chopped

  • 1/8 tbsp garlic powder

  • 1/8 tbsp black pepper

  • 1/2 tbsp fresh lemon juice.

Chickpea Salad Recipe:

  1. After weighing out 100 g of chickpeas, remove the skin.

  2. In a bowl, mash the chickpeas and avocado to the preferred texture (mash more if you’d like a smoother texture; mash less if you’d like a chunkier texture).

  3. Add the vegan mayo, shallot, chives, lemon juice, garlic powder, and black pepper. Mix until all of the ingredients are well combined.

Sandwich Assembly:

  1. Toast your bread of choice until crispy and rub a raw clove of garlic on your warm toasted bread. Or, if you’d like a lettuce wrap, omit steps 1 and 4.

  2. Add a layer of crisp lettuce.

  3. Top lettuce with chickpea salad mixture.

  4. Add the top slice of bread and enjoy.
