Vegetarian Kimchi Scallion Pancakes

Ingredients:

  • 1 cup of Kimchi

  • 1/4 cup of kimchi brine

  • 1/4 cup of scallions

  • 1 whole egg

  • 1 cup of all-purpose flour

Recipe Method:

1. In a bowl, thoroughly mix together the kimchi, kimchi brine, scallions, egg, and all-purpose flour to create a batter. Season with salt and pepper to taste.

2. In a non-stick pan, heat some oil or plant-based butter over medium heat.

3. Add the pancake batter and smooth it out to create a round patty-like shape.

4. Fry pancakes in the oil or butter until the bottom of the batter begins to bubble and it is golden brown.

5. Flip and cook until both sides are golden brown and crispy.

6. Enjoy with soy sauce or sukang sawsawan (Filipino vinegar sauce).
