Lemon Garlic Salmon Bowl With Mango Salad

Ingredients For Salmon:
6oz skinless Atlantic Salmon filet
1 tbsp mayonnaise
2 Cloves Garlic
Juice from 1/4 of a lemon
Salt & Pepper To Taste
Ingredients For Salad:
1 Mango, chopped, without seed
1 tbsp chopped red onion
1/2 tbsp roughly chopped cilantro
Juice from 1/4 of a lime
1/8 tsp garlic powder
Salt & Pepper To Taste
Recipe For Salmon:
Preheat the oven to 400-degrees F.
Finely mince the garlic.
In a bowl, mix together the mayonnaise, minced garlic, the juice of 1/4 a lemon, and a pinch of black pepper for taste.
Place the salmon filet on a foil-lined baking sheet. If there is skin, place the salmon skin down.
Spread the mayonnaise mixture over the salmon.
Bake for 15 minutes.
Change the oven setting to broil and cook or an additional 5 minutes. Remove it from the oven and let it rest.
Note: If you had skin on the salmon, after you let the salmon rest and begin to use a spatula to remove it from the tin foil, the skin should come off effortlessly.
Recipe For Mango Salad:
Cut the mango down each side of the seed (save it as a snack for later). Using a spoon, scoop the fruit out of the skin. Chop the mango fruit into thick chunks
Chop 1 tbsp of red onion.
Roughly chop 1/2 tbsp of cilantro leaves.
In a bowl, mix together the chopped mango, chopped red onion, cilantro, the juice of 1/4 of a lime, garlic powder, salt and pepper.
Meal Assembly:
Add the salmon and mango salad to a plate. Enjoy.
