Spicy Mushroom Poke Bowl | Vegetarian Sushi Bowl

This recipe makes 1 serving.

Ingredients:

  • 75 g of raw oyster mushrooms

  • 1 tbsp of vegetable oil

  • 1 tsp of fish sauce

  • 1 tbsp of mayonnaise

  • 1 tbsp of sriracha

  • 1 tbsp of soy sauce

  • 2 tsp of sugar

Optional Bowl Toppings:

  • White Sushi Rice

  • Sliced Cucumbers

  • Sliced or Cubed Avocado

  • Mango Slices

  • Pickled Ginger

  • Wassabi

  • Thinly sliced Carrots

  • Shiitake Mushrooms in teriyaki sauce

Preparing the oyster mushrooms:

  1. Clean the oyster mushrooms with water and pat dry.

  2. Using your hands, shred the oyster mushrooms, following the grain of the gills, to make a stringy pile of mushrooms.

  3. In a pan, heat up the oil over medium heat. Fry the mushrooms until all of the moisture has been released and evaporated. Season with salt, pepper, and garlic powder.

  4. Meanwhile, in a bowl, mix together the fish sauce, mayonnaise, sriracha, soy sauce, and sugar until thoroughly combined.

  5. Once the mushrooms are cooked, remove from heat, transfer to a bowl, and set aside to cool for at least 15 minutes.

  6. Mix the mushrooms and the spicy mayo sauce together until combined thoroughly.

Serving Instructions:

  1. Serve the spicy mushrooms over a bed of sushi rice in a bowl

  2. Top with whatever toppings you enjoy

  3. Dress with more soy sauce

  4. Enjoy with dried seaweed sheets
