Ingredients:
75 g of raw oyster mushrooms
1 tbsp of vegetable oil
1 tsp of fish sauce
1 tbsp of mayonnaise
1 tbsp of sriracha
1 tbsp of soy sauce
2 tsp of sugar
Optional Bowl Toppings:
White Sushi Rice
Sliced Cucumbers
Sliced or Cubed Avocado
Mango Slices
Pickled Ginger
Wassabi
Thinly sliced Carrots
Shiitake Mushrooms in teriyaki sauce
Preparing the oyster mushrooms:
Clean the oyster mushrooms with water and pat dry.
Using your hands, shred the oyster mushrooms, following the grain of the gills, to make a stringy pile of mushrooms.
In a pan, heat up the oil over medium heat. Fry the mushrooms until all of the moisture has been released and evaporated. Season with salt, pepper, and garlic powder.
Meanwhile, in a bowl, mix together the fish sauce, mayonnaise, sriracha, soy sauce, and sugar until thoroughly combined.
Once the mushrooms are cooked, remove from heat, transfer to a bowl, and set aside to cool for at least 15 minutes.
Mix the mushrooms and the spicy mayo sauce together until combined thoroughly.
Serving Instructions:
Serve the spicy mushrooms over a bed of sushi rice in a bowl
Top with whatever toppings you enjoy
Dress with more soy sauce
Enjoy with dried seaweed sheets
