Cheesy BBQ Kolbassa Rice | One Pan Meal

This recipe makes 2 serving

Ingredients:

  • 1 tbsp extra virgin olive oil

  • 250 grams of kolbassa*

  • 1 cup chopped broccoli

  • 1 cup chopped mushrooms

  • 1/2 cup chopped onions

  • 1/8 cup BBQ Sauce

  • 1/8 cup cooked white rice

  • 1 oz cubed mozzorella cheese

  • 1 tbsp fresh chopped parsley

  • Salt & pepper to taste

*My kolbassa of choice (and the one I used for this recipe to calculate the nutrition facts) is the Farm Boy Turkey Kolbassa.

Recipe:

  1. In a pan, heat the olive oil.

  2. Sauté the onions in the oil until fragrant.

  3. Add the kolbassa and pan fry for 2-3 minutes.

  4. Add the mushrooms and broccoli. Sauté until they become soft.

  5. Add the rice and BBQ sauce. Season with salt and pepper to taste. Mix everything together and let sit for 1-2 minutes.

  6. Turn off the heat, sprinkle the cheese on top, and cover with a lid. Let sit until the cheese is melted.

  7. Serve with a sprinkle of fresh parsley and season with salt and pepper to taste. Enjoy
