Easy Lentil Wrap

This recipe makes 6-8 serving (nutrition facts above for 6 servings)

Ingredients:

  • 1 cup of lentils

  • 2 cups of water

  • 1 tbsp olive oil

Optionally, you can add other toppings in your wraps like whole grains, chopped cilantro, tomatoes, green onions, etc, to add more flavour.

Recipe:

  1. Add 1 cup of lentils and 2 cups of water into a bowl. Let soak for 3+ hours (or overnight).

  2. In a blender, add the soaked lentils and the water the lentils were soaking in until a crepe-like batter is formed.

  3. In a pan, heat 1 tbsp of olive oil over medium heat.

  4. Pan fry batter and flip until you have 8 wraps.
