Herbed Goat Cheese Stuffed Mushrooms | Easy Sheet Pan Meal

This recipe makes 1 serving

Ingredients:

  • 7 brown mushroom caps

  • 12 spears of asparagus

  • 3 oz garlic and herb goat cheese

  • 1 spray avocado oil

  • 1 tbsp cranberry sauce

  • salt and pepper, to taste

Recipe:

  1. Preheat the oven to 350*F

  2. Remove the stems from your brown mushrooms (and save for another recipe or for vegetable stock).

  3. Evenly stuff all of the mushrooms with the goat cheese

  4. On a baking sheet, lay out the stuffed mushrooms and asparagus spears

  5. Spray with avocado oil and season with salt and pepper, to taste.

  6. Bake for 20 minutes (or until the asparagus is tender).

  7. Serve on a plate with 1 tbsp of cranberry sauce.
