Harvest Stuffed Squash

This recipe makes 2 serving

Ingredients:

  • 1 butternut squash (roughly 1.5 lbs)

  • 1 cup chopped kale

  • 12oz learn ground turkey

  • 1 cup chopped onions

  • 1 clove garlic

  • 2 tbsp extra virgin olive oil

  • 10 grams of shredded low-fat cheese

Recipe:

  1. Preheat the oven to 350*F

  2. Cut your butternut squash in half and drizzle 1/2 a tbsp extra virgin olive oil over each half until all surfaces are covered in oil. Season with salt and pepper.

  3. Place your butternut squash on a baking sheet and bake in the oven for 45 minutes (or until the squash is tender).

  4. Meanwhile, in a pan, heat up the second tablespoon of extra virgin olive oil. Add the garlic and onions. Sauté until fragrant.

  5. Add the raw ground turkey and cook until fully cooked. Season with salt and pepper.

  6. Add the kale and mix everything together. Cook until the kale is lightly wilted. Set this mixture aside for later.

  7. Once the squash is cooked, spoon 6oz of turkey mixture into each half. Sprinkle 5g of shredded cheese on each half. Bake in the oven for an additional 5 minutes (or until the cheese is melted).

  8. Serve and enjoy!
