This recipe makes 1 serving.

Ingredients:

  • 1 tsp extra virgin olive oil

  • 10 oz canned crushed tomatoes

  • 1/4 tsp cayenne pepper

  • 1/2 tsp ground cumin

  • 1 tsp paprika

  • 2 cloves of raw garlic

  • 1/2 sweet raw onion

  • 1/2 cup chopped red bell pepper

  • 2 whole eggs

Optionally, serve with:

  • Slices of sour dough bread

  • Fresh Pita

  • Croissants

  • Over Rice

Stovetop Shakshuka (No Oven Bake)

  1. Heat the oil in a pan over medium heat.

  2. Thinly slice the onion and bell peppers. Mince the garlic.

  3. Sauté the onion and bell peppers in the oil until the onions are translucent.

  4. Add the garlic and spices and sauté until everything is combined and the garlic and spices become fragrant.

  5. Add the crushed tomatoes. Stir to combine and simmer for about 7-10 minutes, until slightly thickened.

  6. Make 2 small wells in the sauce, crack an egg into each well, season with salt and pepper, and cover until the eggs are perfectly poached.

  7. Serve with slices of sourdough bread, fresh pita, croissants, or over rice.
