Butternut Squash Baked Feta Pasta

Ingredients:
1 large butternut squash (roughly 2 lbs)
4 oz block of feta cheese
200 grams of dry pasta of choice
3 links of pork Italian sausage, chopped
1 cup of cottage cheese
1 tbsp of olive oil
1 tbsp of garlic powder
Salt and pepper to taste
Recipe:
Preheat the oven to 350*F
Peel and chop the butternut squash into 1-inch cubes. Place in an oven-safe baking pan.
Drizzle with olive oil, seasoning, and cottage cheese.
Chop the Italian sausage and add to the pan.
Mix together until everything is through combined.
Make a divot in the middle of the pan and place the feta block
Cover with foil and poke 2 venting holes at the top of the foil.
Bake for 45 minutes (or until the butternut squash is soft and easy to smash with a fork).
Meanwhile, cook pasta of choice according to box directions.
Once complete, using a fork, mash the feta and butternut squash to make a sauce. Add the cooked pasta. Mix everything together and serve.
Optionally, top with hot honey, more butternut squash, or shredded parmesan.

Purchase frozen chopped butternut squash when butternut squash is not in season. They will already be pre-chopped and flash frozen during peak season, to have more sweetness and nutrient content.
If you don’t have access to feta, use 2 cups of cottage cheese instead.
Make a double batch and freeze one batch. On a busy night, just pop the portion in the oven for 30 mins.
