Asparagus and Feta Omelette

Ingredients:
3 large eggs
4 medium spears of asparagus
1 spray of avocado oil
2 tbsp of crumbled feta cheese
Salt & pepper, to taste.
Recipe:
In a toaster oven or air fryer, bake/air fry the aparagus until they are cooked and tender. Season with salt and pepper to taste.
In a bowl, mix together 3 eggs, 1 tbsp of feta, and salt and pepper to taste.
Heat a pan over medium heat with a spray of avocado oil
Add the egg mixture, cook until set, flip, and continue to cook until fully cooked through.
Once cooked, put on a plate. Sprinkle with the additional tbsp of feta cheese and lay the cooked asparagus on top.
Fold corners of the omelette in to make a pocket. Enjoy
