Asparagus and Feta Omelette

Ingredients:

  • 3 large eggs

  • 4 medium spears of asparagus

  • 1 spray of avocado oil

  • 2 tbsp of crumbled feta cheese

  • Salt & pepper, to taste.

Recipe:

  1. In a toaster oven or air fryer, bake/air fry the aparagus until they are cooked and tender. Season with salt and pepper to taste.

  2. In a bowl, mix together 3 eggs, 1 tbsp of feta, and salt and pepper to taste.

  3. Heat a pan over medium heat with a spray of avocado oil

  4. Add the egg mixture, cook until set, flip, and continue to cook until fully cooked through.

  5. Once cooked, put on a plate. Sprinkle with the additional tbsp of feta cheese and lay the cooked asparagus on top.

  6. Fold corners of the omelette in to make a pocket. Enjoy
