Healthy Breakfast Flatbread Pizza

Ingredients:

  • 1 flame baked original naan*

  • 1 large egg

  • 1 oz turkey kolbassa**

  • 10 grams of shredded mozzarella

  • 1 tbsp chopped pea shoots (or spinach)

  • Sprinkle of granulated garlic powder

  • Salt & pepper, to taste

*My naan of choice (and the one I used for the recipe to calculate the nutrition facts) is the Farm Boy Original Naan.

**My kolbassa of choice (and the one I used for this recipe to calculate the nutrition facts) is the Farm Boy Turkey Kolbassa.

Recipe:

  1. Preheat your oven to 350*F.

  2. Meanwhile, while waiting for the oven to preheat, remove the thick casing from the kolbassa and chop into thin strips, shred the mozzorella cheese. and roughly chop the pea shoots.

  3. Line a baking sheet with parchment paper and place a naan in the center.

  4. Springle the kolbassa and mozzarella around the naan - making sure to leave space in the center for the egg.

  5. Crack an egg in the center of the naan. Poke a hole in the egg yolk to speed up cooking time

  6. Season with salt, pepper and garlic powder.

  7. Bake in the oven for 12 minutes (or until the egg whites are cooked through and the cheese is melted).

  8. Once taken out of the oven, sprinkle the fresh, chopped pea shoots on top of the flatbread pizza for garnish and enjoy.

Optionally: Top with your fave sauce. My husband and I really like using ketchup, bbq sauce or pesto.
