High Protein Avocado Toast

Ingredients:

  • 2 slices of whole grain bread

  • 1/2 an avocado

  • 2 large boiled eggs

  • 1/2 cup cottage cheese

  • Salt, pepper, & garlic powder, to taste

  • 1 lime wedge

Recipe:

  1. Soft boil 2 eggs (or to save time, purchase pre-boiled eggs from the grocery store). Once cooked, slice the eggs.

  2. Toast two slices of whole grain bread (Or your choice of bread).

  3. In a bowl, mash 1/2 an avocado with the cottage cheese. Season with the lime, salt and pepper.

  4. Top the toast with the avocado mixture and then the sliced boiled eggs.

Optional: garnish with pea shoots and hot honey.

Purchased hard boiled eggs from the grocery store instead of boiling them yourself from home, OR pre-boil 2-3 days worth of eggs and store them in the fridge. Do not slice them until you’re ready to serve.
